“Quartet” Plan July–September

An indulgent plan to enjoy the season's flavors with a large group. Surround a spectacular, seasonally lavish hitotsara to create a day that feels like a reward for yourselves.

    Roast chicken made with a local chicken “赤平火をどり,” raised in the vast landscape of Hokkaido with a bloodline of game fowl, slowly roasted whole with seasonal vegetables to a fragrant, savory finish. We also offer two kinds of spicy sauces.

    Using only the highly flavorful base meat of the crab legs, this cocktail-style crab dish is served with lemon and hot sauce for a crisp, refreshing taste. Topped with caviar, it’s an appetizer designed for a luxurious main course. Includes three kinds of bread.

    Detail

    The chef blends a selection of carefully chosen whole spices and ground spices. The sharp spiciness and the refreshing aroma that wafts from the nose bring out the richness and sweetness of the butter rice.

    Fresh vegetables and Kanagawa Prefecture’s Yokohama Beef shank are marinated in fresh herbs and red wine, and slowly simmered to tenderness. It’s a Hitosara dish that captures the chef’s passion in a smooth, premium European curry.

    Craft Burger “SWING” is inspired by American burgers from Billboard’s home country, with the essence of Yokohama—the port town—added.
    Using an original-blend bun and Yokohama beef, the patty is crafted in our own proprietary blend.
    Carefully prepared house-made bacon, two kinds of blended cheese, and a rich, umami-packed gravy sauce made from Yokohama beef stock are the key flavors.
    Sidewinder potatoes and tomato-herb fries come with our house-made ketchup.
    Additionally, a real vinyl record is used as the plate to create a Billboard Live–style experience.
    The burger’s overflowing umami and smoky aroma will have you swinging—please enjoy this meticulously crafted burger!

    Grape varieties: Cabernet Sauvignon / Merlot

    A glass with aromas of ripe plums, blackberries, cassis, and other red- and dark-fruited notes, with a hint of fig.

    Slowly confit the seasonal ayu (sweetfish) in herb oil, then grill it to a fragrant, browned finish. We paired it with a ratatouille of seasonal vegetables flavored with finely chopped uruka (ayu shiokara) and kinome. Finished with a note of long-aged balsamic vinegar as an accent, a dish that evokes summer.
